"In the restaurant business for 17 years, I started working in establishments located on the Normandy landing beaches. Complete and a jack of all trades, I learned pastry and perfected my skills alongside Jean-Thomas Schneider, world pastry champion in 2017. After running my own restaurant in Normandy for 4 years, I came to settle in Nîmes in 2021 where I worked in the kitchens of La Belle Sainte-Lucie.
